I'm back and I made them! You were absolutely right about how rich these were! I think one of the things I enjoy most about your recipes is how some of the ingredients and combinations so often surprise me! Admittedly, when I saw the photos for this recipe, I was enticed to wanting to make them. However, as I began constructing the recipe, I thought to myself: "Oh no. What if these are not as good as they look? What if they taste terrible? What will I do? What will I say? Especially when Erin went to such lengths to custom make this recipe with the ingredients I sent her?" The naga-hajiki seaweed is an item that I have not even cooked with living in Japan! (See! You are so much braver than me in this arena!) As I was soaking them, I was rather repelled by how they looked and smelled as they absorbed the water. I was convinced this was going to be a disaster–but again, you utterly surprised and delighted me with the results! The seaweed did not overpower the doe as I had imagined it would. As the matter of fact, it's flavor and accent was subtle–instead denoting to the beignet's rich and savory flavor. I was in heaven with how light and airy they were at the same time as being a flavorful source of comfort food. The shikwasa jam was amazing, even though I had to use green chili instead of jalapeno. I will definitely be making these again and am honored by your thoughtful ideas and innovations.
