The week you posted this, I had just come home with a new vegan product I had never tried before from the local Japanese organic shop. The product was a kind of vegan cumin flavored fromage imported from a brand called, "Le Sojami." Have you heard of it? Anyhow…it was surprisingly delicious—though verily expensive. I mixed the fromage with vegetarian sausage, filled the raviolis and made your sauce as outlined. Delicious…so much so, that I went back to the store to purchase more of the fromage to make a double batch. Silly of me since it is approx. $20 (converting from yen) per small tub. I just love food too much for my own good! Next step will be to try making a spinoff of the cumin fromage with your cashew cheese recipe? I think it might work…

I hope you like, Claire! Just to be clear, this is not a gluten-free pasta. Semolina flour has a very high gluten content, and I just cut it here with a naturally gluten free rice flour to yield a softer pasta.
