Allow the mixture to sit at room temperature for 10-15 minutes to start the extraction process.

Chill:

  • Mason Jar: Cover the jar with a lid and place it in the refrigerator. Let it steep overnight, ideally for about 12-18 hours.
  • French Press: Cover with the press lid but do not press down the plunger. Refrigerate for the same duration.

Strain:

  • Mason Jar: Place a fine-mesh sieve lined with a coffee filter or cheesecloth over a bowl or pitcher. Pour the coffee mixture through to remove all grounds. Squeeze or press the filter to extract maximum flavor.
  • French Press: After refrigeration, slowly press down the plunger to separate the coffee from the grounds.

Serve:

Fill a glass two-thirds full with ice cubes. Pour the cold brew over the ice. Add vegan creamer and sweetener to taste, and stir well.

Notes

Optimizing Brew Strength: If you find the brew too strong, you can dilute the concentrate with a little water, plant-based milk, or a dairy-free creamer when serving. Start with a 1/4 cup of water and adjust according to your taste.

Prevent Sediment in Your Cup: If you notice sediment at the bottom of your cold brew, consider a second strain through a finer filter. This can help create a cleaner, smoother cup of coffee.

Creative Uses for Leftover Coffee Grounds: Don’t throw away the used coffee grounds! They can be composted or used to make homemade exfoliating scrubs, helping to minimize waste.

Warmed Turmeric-Ginger Cashew Milk

Are you watching The Blacklist? I haven’t been this obsessed with a series since Lost and 24. I love the ongoing mystery behind Red and Lizzie’s connection and how it’s so expertly balanced out with the cleanly resolved blacklist criminal cases in each episode. I think it’s a genius way to frame the series and keep everything interesting. I also love the little details in the margins, like the apple, the Rembrandt and Lizzie’s scar, which have to all potentially mean something. And who is Lucy Brooks? Who is in the photo that Red pulls from the list of the Stewmaker’s victims? Who does Mr. Fitch work for? What’s the deal with Lizzie’s husband and what’s in Nebraska? So. many. questions+theories!

Warmed Turmeric-Ginger Cashew Milk

While watching one of the last episodes, I made this turmeric “tea” which I’ve seen a lot of on pinterest lately. Since then, pouring this beautifully warm, delicately spiced and subtly creamy concoction it onto a mug with turmeric-stained fingers is a little ritual I’ve fallen in love with before curling up on the couch at night. There’s something soothing and nice about the steam, color and unique aroma that’s perfect right before bed.

I feel a little silly giving exact measurements for everything below, because this is a completely eyeballityourself kind of thing, but fresh ginger is key here and pairs perfectly with the earthy and warm quality of the turmeric.

WARMED TURMERIC-GINGER CASHEW MILK

Ingredients

  • 1 cup of cashew milk (soy or almond milk will do as well)
  • 1 tsp Earth Balance OR 1 TB canned coconut cream (skim the heavy portion off the top of the can)
  • 1/2 tsp dried turmeric OR 1 tsp fresh turmeric, grated
  • 1/2 tsp fresh grated ginger
  • a few pinches of cinnamon, cloves and/or anise
  • 1-2 TB raw agave syrup
  • pinch of salt


Instructions

Place the vegan milk into a saucepan over over medium-low heat. Add in the vegan butter or coconut cream, turmeric and ginger, and whisk until smooth.Add in any extra pinches of spice, agave and salt. Heat through until warm, then whisk again and serve immediately.

  • Cook Time: 10 minutes

Raw Almond Milk

I’ve been drinking a lot of Vega shakes lately for breakfast and have gone through countless boxes of almond milk to mix the powder in. I decided to try making my own almond milk this week and it was surprisingly easy. Raw soaked almonds. Water. Blender. I’m going to start making this on the regular. It’s cheaper, tastes better than store-bought almond milk and yields a nice almond pulp, which can either remain in the milk or strained out. I’ve strained out the pulp this time, and have placed it in my freezer until I can figure out a good way to repurpose it. Update: Here’s one — Raw Almond Matcha Cakes.

Raw Almond Milk

RAW ALMOND MILK

Ingredients

  • 2 cups raw almonds, soaked overnight in plenty of water and drained
  • 8 cups water
  • vanilla bean (optional)
  • raw agave nectar (optional)


Instructions

  1. Place the water and almonds in a blender. Blend on high for 2 minutes.
  2. To strain out the pulp, line a tall and thin pitcher (enough to hold about six cups) with a nut milk bag and slowly pour the contents through the bag into the pitcher. Slowly squeeze the bag until all of the nut milk is transferred to the pitcher.
  3. Add in some vanilla bean and/or agave if you want some sweetness, but I think it tastes better plain. Serve chilled.
  4. If you’ve sifted out the pulp and would like to store it for using later, measure out the pulp into 1/2 or 1 cup servings and refrigerate or freeze it in ziploc bags.
